Waffles and Homemade Sausage

Waffles and sausage...is there anything better?  Not according to my husband!  When he got home from work he said "it smells like heaven in here".  As I've said before, his favorite meal is breakfast, I think he wouldn't mind it at all if we had it for dinner every night. 

Tonight, I decided to compare calories and fat of regular waffles, syrup and sausage versus my multigrain waffles, sugar free syrup ad chicken apple sausage. 

Buttermilk waffles average between 250-400 calories per 2 waffle serving.  Now you know, one waffle equals one square, not the entire waffle iron waffle!  As you can see, these Multigrain waffles are 187 calories per 2 waffle serving. 

Pork sausage average between 15-20 grams of fat per serving, Chicken Apple Sausage just has 5!  You do the math.

Regular Mrs. Buttersworth pancake syrup has 210 calories for 1/4 cup serving, I like the sugar free Mrs. Buttersworth pancake syrup which only has 35 calories.  No, that's not a typo, only 35 CALORIES!  Now I know some of you are thinking, only 1/4 cup?  Sometimes that's not enough, and I don't like dry pancakes so I like to add a couple tablespoons of Cool Whip Free which is 15 calories and zero fat for 2 tablespoons.  Also top with fruit for a more satisfying meal.

Chicken Apple Sausage

Ingredients

1 large tart apple, peeled and diced
2 teaspoons poultry seasoning
1 teaspoon salt
1/4 teaspoon pepper
1 pound ground chicken

Directions

In a large bowl, combine the apple, poultry seasoning, salt and pepper. Crumble chicken over mixture and mix well. Shape into eight 3-in. patties.

In a large skillet coated with cooking spray, cook patties over medium heat for 5 to 6 minutes on each side or until a meat thermometer reads 165° and juices run clear.

Yield: 8 patties.

Nutritional Facts 1 sausage patty equals 92 calories, 5 g fat (1 g saturated fat), 38 mg cholesterol, 328 mg sodium, 4 g carbohydrate, 1 g fiber, 9 g protein

Multigrain Waffles

Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
1 cup cornmeal
1 tablespoon sugar
1 tablespoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3 eggs
4 egg whites
3 cups buttermilk
1/2 cup unsweetened applesauce
3 tablespoons canola oil
2 tablespoons butter, melted
Butter and maple syrup, optional

Directions

In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs, egg whites, buttermilk, applesauce, oil and butter; whisk into dry ingredients just until blended.

Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with butter and syrup if desired.
Yield: 28 waffles.

Nutritional Facts 2 waffles (calculated without butter and syrup) equals 187 calories, 7 g fat (2 g saturated fat), 52 mg cholesterol, 336 mg sodium, 25 g carbohydrate, 2 g fiber, 7 g protein, 5 PP per serving.

This recipe makes a lot of waffles.  Perfect for putting in the freezer for easy weekday breakfasts.  Spread with peanut butter or just sugar free jam for a quick, out the door treat.



Caramel Apple Salad
 
1 (3 1/2 oz.) pkg. instant butterscotch pudding
1 (8 oz.) carton frozen whipped topping, thawed
1 (8 oz.) can crushed pineapple with juice
1 c. mini marshmallows
3 c. chopped apples with peel
Mix first 3 ingredients, then add apples and marshmallows until combined. Refrigerate until ready to serve. Serves 8, 3 PP per serving.
