APPLESAUCE BBQ CHICKEN
4 - 6 oz boneless, skinless chicken breasts
½ t. pepper
2 t. canola oil
⅔ c. chunky applesauce
⅔ c. bbq sauce
2 T. brown sugar
1 t. chili powder
Sprinkle chicken with pepper. In large skillet, brown chicken in oil on both sides. In small bowl, combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until meat thermometer reads 170 degrees F.
As you can see, I cut this recipe in half to make two servings.7 PP per serving
ONION ROASTED POTATOES
1 envelope Lipton onion recipe soup mix
2 lb. all-purpose potatoes, cut into large chunks
canola oil
Preheat oven to 450 degrees F. Place potatoes on foil lined baking sheet that has been coated with cooking spray. Drizzle with canola oil (I would guess around 1-2 T, the original recipe called for 1/3 cup! That is NOT necessary!) Sprinkle onion soup mix over top and toss with fingers to thoroughly coat potatoes. Bake, stirring occasionally, 40 minutes or until potatoes are tender and golden brown. Garnish, if desired, with chopped parsley.
3 servings = 3 PP per serving
I decided to throw a bag of steam fresh broccoli in the microwave to go along side of this, makes for a pretty plate doesn't it?
