If you have never tried roasting your vegetables, you are really missing out! I have roasted every vegetable that you can think of but some of my favorites are onions, potatoes, carrots, parsnips, broccoli, cauliflower, sweet peppers, asparagus, green beans and brussel sprouts. Some that didn't turn out so well are mushrooms and celery. I think it's because of the high water content of those vegetables, they just turn to mush.
Tonight I decided to make a one-pan dinner. One sheet pan that is! Line a large cookie sheet with aluminum foil. Spray liberally with cooking spray. Slice and/or chop vegetables into like size pieces. Slice sausages on a diagonal in 1" slices. Place veggies and sausages together on cookie sheet and drizzle with canola oil. Season with salt, pepper and nature's seasoning; toss with your fingers to coat. Roast in 450 degree pre-heated oven for approximately 25 minutes or until veggies are tender and sausages are browned. Talk about easy and delicious.

I also made this bread to go with our dinner. I found the recipe Pinterest, see the link here. I found the idea very interesting and wasn't real sure it would turn out. My bread didn't raise as well as the one in the picture, but I did use whole wheat white flour instead of unbleached like the recipe called for so that may have made a difference. I will try it again using a little less flour and/or more water.
