Pizza Joes

Tonight is pizza night...well, sort of. I found tonight's dinner recipe in the Taste of Home Comfort Food Diet cookbook. Everybody remembers sloppy joes from your childhood, right? Well take the regular old sloppy joe, add pizza sauce instead of tomato sauce, add chopped pepperoni and a few Italian seasonings and you have Pizza Joes! Instead of eating it like a sloppy joe I served them open face more like a pizza. I just spread 1/3 cup meat mixture onto each half bun and top with mozzarella cheese. The meat mixture comes to 5PP per 2/3 cup serving and I served it on an 80 calorie Wonder whole wheat bun for 3PP. On the side I just threw some sweet potato puffs in the oven. These are the Alexia brand and are pretty tasty. I know, I know, I didn't serve a vegetable tonight. Sweet potato's a vegetable, right?



Serve these any night of the week and you are sure to have a hit!
