Pork Chops with Onion Gravy

You remember the episode of The Brady Bunch where Peter wants Porkchops and Applesauce?  That always sounded good to me so I decided to try to put something together with those flavors.

Tonight's dinner is a simple comfort food recipe that can be made any day of the week.  I found this recipe in Taste of Home's Comfort Food Diet cookbook, the original recipe didn't call for the apple, but I thought it would make a tasty addition to the pork and onion.  I served a baked potato along side these chops and steamed baby carrots.  I like the micro-steam baby carrots from Schwan's, they are fast and easy!

Pork Chops with Apple Onion Gravy

4 boneless pork loin chops (1/2 inch thick and 4 ounces each)
1/4 teaspoon pepper
1/8 teaspoon salt
1 small onion, sliced and separated into rings
1/2 small apple, sliced thinly
2 teaspoons canola oil
1/4 cup reduced-sodium chicken broth
1 envelope pork gravy mix
1/8 teaspoon garlic powder
3/4 cup water

Directions
Sprinkle pork chops with pepper and salt. In a large skillet, cook chops, onion and apple in oil over medium heat for 2-3 minutes on each side or until chops are lightly browned; drain.

Add broth. Bring to a boil. Reduce heat; cover and simmer for 7-8 minutes on each side or until a meat thermometer reads 160°.

In a small bowl, whisk the gravy mix, garlic powder and water. Pour over pork. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened, stirring occasionally. Yield: 4 servings.


Nutrition Facts: 1 pork chop with 3 tablespoons gravy equals 210 calories, 10 g fat (3 g saturated fat), 55 mg cholesterol, 528 mg sodium, 6 g carbohydrate, trace fiber, 22 g protein. Diabetic Exchanges: 3 lean meat, 1/2 starch, 1/2 fat.
