Week off

I took a week off from writing my blog, but never fear, I still did some cooking and have photos and recipes to share.   I also hosted a meeting where I prepared some snacks. Be forewarned...these are not Weight Watchers approved:)

My sister and her kids came for Fall Break and I will also share some of the recipes that we made together in another post.  On Friday of Fall Break we took the day and traveled to Meers, Oklahoma and had one of their famous Meersburgers and Peach Cobbler. It's ok, Chris and I shared!!

Here's how I started out my week last Monday...I was the hostess and here is what I served for refreshments.  Again, the snack mix and pretzels are not Weight Watcher friendly.  My sister did figure points on the snack mix and it came out to 6 PP per serving.  Click on the link for the full recipe.

On Tuesday we had a birthday luncheon at work.  The theme was Italian, and as always, there was way too much food.  I did pretty well but since I ate a bigger lunch I decided to eat something real light for dinner.  Enter...Tilapia.  My go-to for a light, quick dinner.  Tilapia is an easy thaw, about 10-15 minutes in cold water, and cooks in about 10 minutes.  I just seasoned it with salt, pepper and lemon pepper and cooked in a little canola oil.  Tilapia is just 2 PP for a 3 ounce serving, so I had two pieces along with a salad.
On Wednesday, my sister and her kids came home for Fall Break so I went to my mom's and cooked dinner.  We had Chili's Margarita Chicken.  I served this chicken with Fiesta Rice from a previous post.  I also preheated the oven to 200 degrees, sprinkled some tortilla chips with lime zest and baked them until warmed.  They tasted just like the tortilla chips at Chipotle.
 After our trip to Meers and Medicine Park we came home to a delicious crockpot meal that I had thrown together before we left.  Slow Cooker Three Envelope Pot Roast Sliders was soooo delicious!  We did eat them "slider style" but commented that they would really be yummy stuffed into a crusty french roll, sort of like a french dip.  HIGHLY RECOMMEND! We didn't make the sauce in the recipe but just used a bottled sauce (Southwest Ranch, I think) found in the mexican food aisle.
The crockpot didn't even get put away before I was assembling our breakfast the next day. If your family gets up at different times on the weekend, Crockpot Breakfast Casserole might be just the thing for you.  Throw it together before you go to bed and wake up to eggs, cheese, sausage, potatoes...what can be wrong with that?  Nothing!

Sunday night my mom made her grilled chicken.  She has one of those Holland Grills and it makes the most delicous chicken.  To go along with it I made Carmelized Onion Mashed Potatoes.  These are so good but they aren't a quick side dish.  Since you are using carmelized onions, you need to plan ahead because they take time, but are so worth it.  These potatoes come out to 5 PP per serving.

One more thing...I don't usually talk about lunch but I had been seeing the Panera Bread commercial for the Roasted Turkey and Cranberry Panini and since we don't live close to a Panera Bread I decided to fulfill my cravings in another way.  I put a whole chicken in the crockpot and cooked all day on low and used the breast meat on whole wheat bread and spread with canned whole berry cranberry sauce.  I used 3 ounces of chicken (3 PP), whole wheat bread (3 PP), 2 tablespoons cranberry sauce (2 PP) and spinach.  OH, YUM!
