No More Excuses...

No more excuses...that's what my weight watchers leader said to me last night. You know, she was exactly right. Four months of this year I spent campaigning for my job, eating out, getting home late and a multitude of fundraiser dinners...then there was vacation, something I haven't done in a very long time. That brings us to now - no more excuses!

Time to get back on the horse, er treadmill that is! As I walk on my treadmill watching the opening ceremonies of the Olympics, I think about these athletes and their dedication to their sport and how LAZY I am! Again i say, no more excuses! I guess I better get back to my walk.

I wanted to share a quick and easy recipe that I got at my weight watchers meeting. This recipe is so easy and so quick to make I'm sure it will become a staple in your menu.



Diet Cola Chicken

INGREDIENTS

1 envelope(s) Soup, onion  mix (dry)
4 boneless skinless chicken breasts
1 cup(s) Ketchup
1 can(s) or bottle(s) Soft drink, cola, diet (I use Coke Zero)

INSTRUCTIONS

Spray skillet with cooking spray and place in skillet. Sprinkle with onion  soup mix then pour ketchup over chicken, then add the diet soda. Cook on medium heat, cover and simmer until sauce thickens, about 25 minutes.

4 servings, 6 PP per serving
