I was on Pinterest the other day and I saw a pin from a site that has tons of lunch ideas for your kids lunch boxes. Now, I had heard of bento boxes before but didn't realize this was such a craze right now. If you aren't familiar with this concept, I'll tell you about some of the sites I found. The basic idea is to pack healthy, nutritious meals for your child's lunchbox and "build" it in a creative way so that your kids will want to eat it. While I was looking through all the beautiful, colorful photos people post, something occurred to me...well, two things actually, 1) these people have WAY too much time on their hands, and 2) why shouldn't I eat like that? Think about it, small portions of protein (meat, eggs), dairy (cheese, yogurt), carbs (crackers, whole grain bread), fruit and veggies...all things that are good for someone watching their diet. In other words, eat like a kid!
I'm going to put together a few lunches using this concept and ill get back to you on the results! Here is a website to give you an idea of what I'm talking about...
